POTATO PANCAKES

An old fashioned treat!

 

 2 eggs
1 small onion, peeled & sliced

1 teaspoon sea sale
2 tablespoons all purpose flour

¼ teaspoon baking powder
3 cups raw, peeled & cubed potatoes

 

Directions:

Put the eggs, onion, salt, flour, baking powder, & half the potatoes in the blender.  Cover & process until blended.  Add the remaining potatoes & process until well blended.  Pour onto a hot, well-oiled griddle.  Brown on both sides & drain on a paper towel if needed.  A food processor with a metal blade can be used in place of a blender.  This recipe makes 12 small pancakes.  Serve with the bacon, applesauce & sour cream or your favorite syrup!  A family favorite!
