ITALIAN BREAD SALAD

 

1 loaf Italian bread, cubed

4 cups plum tomatoes, wedged

½ cup sweet onions, thinly sliced

2 green onions, sliced including greens

½ cup fresh basil, thinly sliced

¼ cup balsamic vinegar

¼ cup extra virgin olive oil

1 tablespoon garlic, minced

2 tablespoons capers

3 tablespoons water

½ teaspoon sea salt or to taste

freshly ground pepper

tiny fresh milk mozzarella balls (optional)

sliced roasted peppers (optional)

 

Directions:

 

Slice & Cube the bread, leaving on the crusts.  If it is not dry, place the cubes on a cookie sheet & dry in the oven, making sure NOT to brown it.  Use the bread at room temperature.  Wedge the tomatoes, slice the onions & basil leaves & place in bowl & add capers.  Whisk together the vinegar, olive oil, water, & garlic.  About 15 minutes before serving, toss together all the ingredients with the dressing & add fresh ground pepper.
