HARVEST LOAF

A perfect holiday gift from your kitchen!

 

1 ¾ cups all purpose flour, sifted

1 teaspoon baking soda

1 teaspoon cinnamon

¼ teaspoon ginger

¼ teaspoon cloves

½ teaspoon salt

½ teaspoon fresh grated nutmeg

1 cup granulated sugar

2 eggs, beaten

½ butter or margarine, softened

¾ cup pumpkin puree

¾ cup chocolate chips

¾ cup walnuts, chopped

 

Spicy Glaze

½ cup powdered sugar, sifted

1/8 teaspoon nutmeg, fresh grated

1/8 teaspoon cinnamon

2 tablespoons cream

 

Directions:

Preheat the oven to 350 degrees. Sift together the flour, salt, soda, & spices. In a large mixing bowl, cream the sugar & shortening until light & fluffy.  Blend in the eggs at low speed.  Add the dry ingredients alternately with the pumpkin.  Stir in ½ cup of the nuts & chocolate chips.  Pour into a prepared 9” X 5” loaf pan & sprinkle ¼ cup of chopped nuts on top.  Bake for 60-70 minutes or until tests done.  Let cool in the pan for 10 minutes & then remove to a rack.  Drizzle with glaze & let rest for 6 hours before cutting.  This is an old family recipe.
