FRESH  ORANGE  MERINGUE  PIE

1 ½ cups sugar

¼ cup plus 2 tblsp. Cornstarch

¼ tsp. salt

1 ½ tsp. fresh grated orange peel

4 egg yolks, well beaten

3 cups fresh squeezed orange juice

¼ cup plus 2 tbsp lemon juice

3 tblsp. Butter or margarine

Mix    sugar, corn starch, and salt using wire whisk.  Gradually blend in juice until smooth.  

Add well beaten egg yolks blending thoroughly.

Add butter or margarine.

Gradually bring to full boil, stirring gently and constantly, over the heat and reduce heat slightly when it starts to thicken boiling the mixture for 1 minute.  Pour into cooked pie shell.

MERINGUE

4 egg whites  (room temperature)

¼ tsp cream of tartar

8 tblsp. Sugar

Whip until forming peaks and then spread over pie mixture.    Place in oven and cook until golden brown.
