CURRIED SPINACH SALAD

 

An all time favorite at any dinner!

 

2 bunches spinach leaves, washed & chilled

2 whole eggs, hard-boiled, & chopped

1 pound bacon, diced, sautéed & drained

½ cup olive oil

¼ cup white wine vinegar

2 tablespoons white wine

1 teaspoon curry powder

2 teaspoons soy sauce

½ teaspoon garlic salt

½ teaspoon fresh ground pepper

 

Directions:

 

Mix all of the dressing ingredients together & chill.  At serving time, toss together the spinach, eggs & dressing.  Serve immediately.  For variation, you can add thinly sliced fresh mushrooms & your favorite croutons.
