CHICKEN SALAD IN A HURRY

 

1 whole roasted chicken from the deli at the local grocery

1 English cucumber, peeled, quartered & cut into bite size chunks

1  15 ounce can of diced tomatoes with green peppers, onions & celery

1/2 cup chopped Walla Walla Onion (or any other sweet onion)

3 ripe fresh tomatoes, seeded & chopped

4 cups of day old Italian bread, cut into large cubes

3 tablespoons olive oil

1 cup torn fresh basil leaves (use fresh spinach if you don’t like basil)

 

Directions:

 

Take the chicken apart & set aside, discarding the skin & bones.  In a large sauté pan, sauté the bread croutons with the olive oil until they are a golden brown.  Then add the tomatoes, canned tomatoes, onion, basil & chicken & toss.  Do not heat.  Salt & pepper to taste.  Place on a base of romaine leaves & top with parmesan cheese curls. (You can use grated if you wish.)  Serve immediately with your favorite chilled Pinot Grigio.
