BEEF FOR A BUNCH

 

5 pounds cut up beef (stew meat size pieces)
2 cans cream of mushroom soup

3 ounce can tomato paste (more to taste)
¾ cup dry sherry or red wine

1 envelope dry onion soup mix
1 pound fresh mushrooms sliced

 

HURRY CUDIRECTIONS:

Preheat the oven to 325 degrees. Prepare large casserole with baking spray.  Toss beef in a light amount of flour. Combine all ingredients in a large casserole.  Cover. Bake at 325 degrees or longer until done.  Serve over noodles or rice.  Serves 12-14.  This recipe can be increased & done in a large roaster for a big group. If that is done, allow a longer cooking time.  I have found that buying roast beef on sale & cutting it up is usually cheaper than buying “stew meat”.
