APPLE BRUNCH BISCUITS

Can’t you just smell these baking! 

 

½ cup Splenda for baking (you can use sugar)

1 egg, beaten

1 cup ricotta cheese

½ teaspoon vanilla extract

½ cup sliced almonds

 ½ teaspoon cinnamon

2 tablespoons apple pie filling for each biscuit (you can use peach, cherry, blueberry pie filling or a thin slices of a peeled  fresh apple)

1 can of Grands buttermilk biscuits

 

Directions:

Preheat the oven at 375 degrees.  Prepare 8 large muffin pans or custard cups with baking spray.  In a small bowl, combine the sliced almonds & cinnamon & mix well together.  Combine the Splenda, ricotta, & beaten egg & beat on high for one minute with a mixer.  Open the tube of biscuits & separate into 8 pieces.  Press the biscuit in the baking pan, pressing it evenly in the bottom & up the sides of the cups.  Place 2 tablespoons of the apple filling or sliced apple in the bottom of the cup.  Spoon 2 tablespoons of the cheese mixture over the apple mixture.  Sprinkle with the cinnamon nuts.  Bake at 375 degrees for 20-25 minutes or until the biscuits are golden brown.   Let cool 5 minutes & then remove the biscuits from the cups.  Serve warm.  Refrigerate leftovers.
